Here is the healthy melting potatoes recipe:

Ingredients:

  • 4 tbsp of butter
  • 1 cup chicken broth, or vegetable broth
  • 2 tsp of fresh rosemary, or fresh thyme leaves
  • 1 tsp kosher salt
  • 2 pounds Yukon Gold potatoes
  • 2 cloves of garlic
  • 1 tsp black pepper

Preparation:

At first, preheat your oven to 500°F (260°C) with the rack in the upper-middle position. Next, peel two pounds Yukon Gold potatoes and slice them 1-inch thick. Melt the butter (unsalted), and toss the potatoes with it. Then, add salt and pepper, and chopped thyme or rosemary.

Afterward, transfer them to a 9 x 13-inch metal baking dish and make sure to place them in a single layer. Bake for 15 minutes, flip them, and bake for additional 15 minutes.

When done, remove the baking dish from the oven, add chicken or vegetable broth and add 3 to 4 smashed garlic cloves. Again, return the pan in the oven for an extra 15 minutes, until most of the liquid is absorbed. Serve warm and enjoy the healthy melting potatoes!
